  • Mission Wheat and White Deli Wrap

  • 75g drained tinned Puy lentils with 1/2 tsp concentrated vegetable stock added

  • 40g frozen soya beans

  • 1/4 an apple (Pink Lady or Cox), finely diced

  • 1tsp extra virgin olive oil

  • 15 fresh mint leaves, washed and finely chopped

  • Zest of 1/4 lemon

  • 1/2 - 1tsp lemon juice

  • Black pepper to season

  • Step 1

    Firstly, place the frozen soya beans in a pan of boiling water and cook for 3 minutes.

  • Step 2

    Meanwhile, peel and finely dice the apple before placing it into a mixing bowl. When the soya beans are cooked, drain them and add to the bowl along with the cooked lentils.

  • Step 3

    Add the remaining ingredients and stir well until mixed. To serve, pop the mixture into wraps and fold them up tightly.

  • Step 4

    Chefs top tip swap the apple for a couple of tablespoons of pomegranate seeds to give the wraps a fruity kick.
