  • 6 Mission Protein Plant-Powered wraps, warmed

  • 1 1/4 cups cauliflower rice

  • 3 tbsp olive oil, divided

  • 6 eggs

  • 1/4 tsp salt

  • 1/2 tsp pepper

  • 1/3 cup pico de gallo

  • 1 avocado, halved pitted, peeled and sliced

  • 1/3 cup cheddar cheese, shredded

  • Step 1

    Heat 2 tbsp. olive oil in large pan set over high heat. Cook cauliflower rice for 3 to 5 minutes or until tender. Set aside.

  • Step 2

    Beat together eggs, salt and pepper. Heat remaining oil in skillet set over medium heat. Cook eggs, stirring frequently, for about 5 minutes or until set and soft curds have formed.

  • Step 3

    Spoon cauliflower rice evenly down the center of each tortilla, leaving a 1-inch border at both ends. Top with eggs, pico de gallo, avocado and cheese. 

  • Step 4

    Fold up bottom of each tortilla over filling, then fold in sides and starting from bottom, roll up tightly.
