6 Mission Wheat & White Mini Wraps

1 egg

1 tsp tumeric

1 tbsp water

1 tbsp sunflower oil

1 white onion

1 red pepper
-
3 spring onions

400g beef mince
-
1 tsp salt
-
2 cloves of garlic (crushed/grated)

1 scotch bonnet chilli or red chilli

1 tbsp spice mix (2 tsp garam masala, 1 tsp smoked paprika, 1 tsp tumeric, 1/2 tsp thyme)

1 beef stock pot
-
150ml boiling water
-
150g grated mature cheddar

1 tbsp mayonnaise
-
1 tbsp jerk bbq sauce

Step 1
Preheat the oven to 220C / 200C Fan

Step 2
Finely dice the onion, pepper, and spring onion in in a medium sized frying pan with oil and fry on medium heat for 5 minutes, until soft

Step 3
Turn up to a high heat, add the beef mince and salt frying until brown

Step 4
Add the garlic, chilli, spice mix, and fry for another 2 minutes on medium heat

Add the stock pot and water simmering for 20 minutes with the lid on

Take off the heat and mix through the grated cheese and allow to cool – this is your Jamaican beef mix!

Mix the turmeric with water and then whisk in the egg – this is your turmeric egg wash!

Lay 2 spoons of the Jamaican beef mix on each wrap, brush the edges with the turmeric egg, fold over and squeeze to seal, getting as much air out as possible

Press around all the edges with a fork, brush the tops with the turmeric egg mix, lay on greaseproof paper on a baking tray and bake for 10-12 minutes

Mix your jerk BBQ and mayo, serve up then enjoy!
