4 medium eggs

Salsa verde

Handful of coriander

1 garlic clove

1 green chilli

Splash of sherry vinegar

150ml extra virgin olive oil

Tomato sauce

1 large onion

Handful of coriander

2 red chillies, deseeded and finely chopped

2 x 400g tins chopped tomatoes

2tsp sherry vinegar

1tsp brown sugar

Salt / pepper

Salsa verde

Step 2
Mix coriander leaves, garlic, and chilli together into a paste. Stir in olive oil and season with sherry vinegar.

Tomato sauce

Step 4
Heat oil and add onion, coriander, chilli and a pinch of salt. Cook over low heat for 10 minutes.

Add garlic and tomatoes. Sherry vinegar and sugar added to taste. Leave to cook for 15-20 minutes.

Season with salt and pepper.

Lightly toast the Mission Deli Original Wraps in frying pan.

Fry the eggs.

Take toasted wrap and add spoonful of tomato sauce, fried egg and top with spoonful of Salsa Verde.
