  • Mission Mexican Street Chilli & Lime Street Tacos 

  • 2 x 400g can black beans, drained & rinsed

  • 4 large ripe tomatoes

  • Bunch of salad onions (chopped)

  • 1 heaped tsp smoked paprika

  • 1 pack feta cheese, or similar, crumbled

  • 2 ripe avocados

  • Juice of 1/2 a lime

  • Handful of fresh chopped coriander

  • Pomegranate seeds

Instructions

  • Step 1

    Saute chopped tomatoes with salad onions and smoked paprika in a splash of oil for a couple of minutes

  • Step 2

    Add the drained black beans, stir and simmer until soft and bubbling (approx 5 mins)

  • Step 3

    Smash the avocado with a fork, add a handful of chopped coriander & the lime juice (this stops the avocado from going brown)

  • Step 4

    Spoon the smoky bean mix & smashed avocado into warm tacos, top with crumbled feta and bejewel with pomegranate seeds!
